Apple, Walnut and Masala Chai Overnight Oats

Creamy overnight oats made with cooled Masala Chai, crisp apple and walnuts for a breakfast that is ready when you are.

Some breakfasts are better for having been made the night before. These oats sit in the fridge with cooled Ghar Ki Chai Masala Chai, milk and chia until thick and creamy, while crisp apple and walnuts keep the whole thing from becoming too soft.

Make two portions before bed and breakfast is mostly done. In the morning, give the oats a stir, add a splash of milk if they need loosening, and finish with the remaining apple and walnuts.

Apple, Walnut and Masala Chai Overnight Oats

Serves: 2   Prep: 10 minutes   Chill: at least 6 hours

Ingredients

  • 100g rolled oats
  • 120ml Ghar Ki Chai Masala Chai, prepared according to the packet instructions and cooled
  • 160ml milk, dairy or plant-based
  • 1 tbsp chia seeds
  • 1 tbsp maple syrup or honey
  • 1/2 tsp vanilla extract
  • 1 small crisp apple, diced
  • 30g walnuts, roughly chopped
  • Small pinch of fine sea salt

Method

  1. Stir the oats, cooled Masala Chai, milk, chia seeds, maple syrup or honey, vanilla and salt together in a bowl or large jar.
  2. Fold in half of the diced apple and half of the walnuts. Cover and refrigerate for at least 6 hours, preferably overnight.
  3. In the morning, stir well. Add a small splash of milk if you prefer a looser texture, then divide between two bowls or jars.
  4. Finish with the remaining apple and walnuts and serve cold.

Notes

Let the prepared chai cool fully before mixing it with the oats. The finished oats will keep covered in the fridge for up to two days. If making them that far ahead, add the fresh apple topping just before serving.
