By late August, a cold drink can still earn its place at the table. This one starts with chilled Sulaimani, then adds crushed blackberries, lemon and sparkling water. The berries soften the tea rather than covering it, and the fizz keeps the whole thing light.
It is best made one glass at a time, while the ice is still hard and the blackberries have only just begun to stain the tea.

Blackberry Sulaimani Fizz
Makes: 2 glasses

Ingredients
- 10 ripe blackberries
- 1 tbsp fresh lemon juice
- 250ml Ghar Ki Chai Sulaimani, prepared according to the pack instructions and completely chilled
- 150ml chilled sparkling water
- Ice
- 2 small mint sprigs, optional
- A little sugar syrup, optional, if the berries are particularly sharp
Method
- Crush the berries. Divide the blackberries and lemon juice between two tall glasses. Press them gently with the back of a spoon so some fruit remains intact.
- Add the chai. Fill the glasses generously with ice, then divide the chilled Sulaimani between them.
- Finish with fizz. Top with sparkling water and stir once or twice. Taste before adding any sugar syrup. Finish with mint if using and serve immediately.
A useful note
Do not muddle the blackberries into a smooth purée. A few crushed berries give the drink colour and fruit without making it thick. If you are making several, chill the prepared Sulaimani in advance and assemble each glass just before serving.
